Perfect for on-the-go snacking or as a light summer appetizer, these savoury protein bites and super simple, super satisfying and super healthy. 100% vegan and gluten-free, these bites can be enjoyed by everyone, so snack away!
Ingredients
1 scoop fermented vegan protein - unflavoredÂ
1 cup short grain brown rice
 ¼ cup toasted amaranthÂ
¼ cup tahiniÂ
2 tbsp sunflower seedsÂ
2 tbsp minced chivesÂ
2 tbsp minced sageÂ
1tsp minced garlicÂ
1 tbsp all purpose liquid seasoningÂ
2 tsp cuminÂ
1 tsp paprikaÂ
½ tsp pink salt

Garnish
1 tbsp black sesame seedsÂ
1 tbsp white sesame seedsÂ
1 tsp paprika  Â
In small saucepan combine short grain brown rice with water 2 cups water, bring to boil and simmer until soft and sticky.Â
Place in large mixing bowl and let cool.Â
Heat ½ tsp of coconut oil in frying pan on high heat and add ¼ cup amaranth. Toast until golden brown and they begin to pop (used lid to grains from popping out). Remove from heat and allow to cool.Â
Add dry ingredients to chilled rice in large mixing bowl and combine well.Â
Add in wet ingredients: tahini, minced garlic and all purpose liquid seasoning, and massage into rice mixture until sticky dough forms. Roll into small bite sized pieces.Â
To garnish mix 1 tbsp black sesame seeds, 1 tbsp white sesame seeds and 1 tsp paprika in small bowl and dust each bite. Serve with a wedge of lemon and your favourite savoury dipping sauce.Â
Makes approximately 2 dozen bites.
