I started using coconut palm sugar because I heard it had a lower glycemic index, like 35 rather than 60 for standard white sugar. This may or may not be true, but I developed a taste for it, and now prefer it in my homemade hot chocolate. I think I don't crave coconut palm sugar like I crave white sugar. Its manufacture, however, can be quite unethical, so I like that Organic Traditions is organic (obviously) and supposedly ethically sourced, so some child isn't suffering because of my sweet tooth. Very satisfying all around.
